Beans Kobbari/Coconut Koora



Ingredients

Fresh beans cut into small pieces - 1/2 kg
Onions - few
Green chillies - 4
Coconut - 50 gm( good if you have fresh one)
Oil, salt - as needed
Garlic pods - 4

Preparation time : 30-45 mins

Method
Grind coconut, green chilies and garlic to a coarse paste


Pressure cook the cut beans until 1 whistle.
Take a tawa, add oil and heat it.
Temper, later add onions and fry them. Once the onions are half done, add beans, turmeric powder and coriander leaves (optional) and stir fry them.


Once the beans are fried to the level as you want, add the ground paste as shown below.
Mix the contents and add salt. Cook under medium flame for 2-4 mins. 
Beans kobbari koora is ready..

Serving options
Can be served with chapathi/rice.

Aloo Kurma/Potato Gravy



Ingredients

Potatoes - 4 big sized (1/2 kg)
Tomato - 1 medium sized
Cashews/poppy seeds - 2 tbsp
Onions -1/4 cup chopped
Oil, Salt - as needed

Preparation time - 30 mins

Method

  • Boil peeled potatoes until they are half done.
  • Grind tomato, cashews, onions, garam masala powder into thick paste.
  • Take a pan, add 2 tbsp of oil and heat it.
  • Add ground paste to the oil, fry it until oil oozes out.
  • Meanwhile cut the boiled potatoes into cubes. Add the potato cubes into the pan. Mash few potato pieces. Add salt.
  • Pour a glass of water and allow the contents to boil and get to a thick paste consistency.
  • Add chilli powder, cook for 3-5 mins...aloo kurma is ready..!!
Serving options
Goes well with vegetable rice, roti.

Vankaya Nuvvula masala koora/Brinjal masala curry




Ingredients

Eggplant/Brinjal/Vankaya -1/2 kg, cut into pieces
Sesame powder -2 tbsp
Cut onions - 1 tbsp
Green chillies -1
Garlic pods -3
Garam masala - 1 tsp
Oil - 2 tbsp
Salt, Red chilli powder- as needed
Tomato -1 optional
         or
Amchur powder - 1/8 tsp

Preparation time : 30 mins

Masala paste:
Grind sesame powder(fried), onions, garam masala, garlic pods by adding little water.

Method

Take a nonstick pan, add oil, let that heat. Add seasoning stuff allow them to fry.
Add cut brinjal/egg plant pieces, salt cook them on medium flame until they turn soft.
Now add the masala paste and allow it to cook for 5 to 10 minutes. Add chilli powder and allo it to cook for 3-5 minutes.
Mouthwatering brinjal masala curry is ready...

Red Cabbage Curry



Items needed

Tofu- 150gm, cut into pieces, dewatered
Red cabbage - 1/2 kg, chopped
Onions -as needed, cut into pieces
Tomato paste - 1 tsp
Coriander powder - 1 tsp
Sambar powder - 1 tsp
Coconut powder - 1tsp
Salt, oil, chili powder- as needed


Preparation time - 30 mins

Method


  • Coat cut tofu pieces with mixture of tomato paste, sambar powder, coriander powder. Soak them for 10 mins.
  • Take a pan,  heat oil (1 tbsp), fry tofu along with the paste in the above step. It looks as  below: 



  • Fry tofu till golden brown color keep aside.
  • Cook the cut cabbage in microwave for  5 minutes alternatively cook in pressure cooker until 1 whistle.
  • Strain the cabbage. Heat oil in a pan, season it, to it, add precooked cabbage. Saute it for 3 minutes.
  • Add fried tofu, allow the contents to saute on low flame for 5 minutes. Add salt, chili powder, coconut powder and any other spices of your choice.
  • Mouth watering red cabbage curry is ready..



Spinach-Tofu/Palak-Tofu curry



Items needed

Spinach- 200gm, washed, whole leaves
Tomato- 1 medium sized, cut into pieces
Green chillies- 3
Almonds- 4 tsps (peeled, raw)
Coriander powder -1/2 tsp
Cumin powder -1/2 tsp
Garam masala - 1tsp
Oil- as needed
Tofu - 100gm, cut into cubes
Onion - 1/4 th of a medium sized, cut into pieces
Ginger and garlic paste - 1tbsp
Lemon juice -  1tsp

Preparation Time - 1 hr


Gravy / Paste:

  • Grind tomato, almonds, cumin powder, garam masala, coriander powder, ginger garlic paste, lemon juice together. Add water during grinding if needed. Keep aside.
Method
  • In a pan, heat oil (1tsp), add cut green chillies, spinach, salt. Allow the spinach to boil. Empty the contents, grind keep aside.
  • Fry tofu in the same pan in oil. Once the tofu changes color, take them off the pan, keep aside.
  • Take a nonstick pan, heat oil (2 tsp's). Add the gravy paste prepared, boil it until, oil comes out.
  • After the paste gets cooked, add spinach paste and fried tofu. Let it boil for 10-15 mins.
  • Delicious Spinach tofu is ready...goes very well with roti and plain rice.

Rajma/Red Kidney Beans recipe


Items Needed

Rajma - 1 Tin
Tomato - 1 medium sized
Garam Masala - 1/2 table spoon
Onions - as needed
Oil - 1 tbsp
Salt - as needed
Coriander powder - 1/2 tea spoon
Garlic - 1 pod, grated
Chilli powder - as needed
Paparika - very little for color
Cinnamon powder -1/2 tbsp

Preparation Time - 10 mins
Cooking time - 20 mins

Method

Microwave rajma in microwave safe bowl for 3 mins on high power, strain and keep aside.
In a cooking vessel, add oil, onions and cinnamon powder.
After frying the contents add tomatoes, boil them until they become soft.
Add rajma with 1/4 th of it being mashed.
Allow it to boil for 5-8 mins.
Add water as per the gravy consistency, to it add salt, chilli powder, paparika powder, coriander powder, garam masala. Allow it to boil for 5-8 mins or until desired consistency. Add coriander leaves for garnishing.

Meal maker curry/Soya chunks curry



Things needed
Meal Maker - 250 gm
Tomato-1/2 medium sized- very small pieces
Carrots-2- grated
Capsicum-1(optional)- small slices
Chilli powder-as needed
Salt- as needed
Dil seeds powder-1 table spoon
Corainder powder-2 tea spoons
Oil- 1 table spoon
Onions- 1/4th of medium  sized one.

Preparation time: 25 mins

Method:
  • Boil water for 2mins in oven. Add meal maker chunks to it, keep them aside for 5mins.
  • Take a non stick pan, add oil in it.
  • After oil gets heated, add seasoning spices, onions and fry them until their color turns golden yellow.
  • Meanwhile peel & grate the carrots. Now add grated carrot, capsicum to the seasoned mix.
  • Fry them for 5 mins, add tomato pieces.
  • Add softened meal maker chunks and salt.
  • Let the curry boil on medium flame for 5 mins then add chili powder, dil seeds powder, coriander powder. Sim it for few minutes.
