Ravva Kesari



Ingredients

Ravva/Semolina - 4 cups, fried till golden color
Sugar - 4 cups
Water - 8 cups
Ghee/Unsalted butter - 1/2 cup
Cashews, almonds and raisins - few

Method

  • Heat water until boil. Meanwhile fry almonds, cashews, raisins in butter and keep aside.
  • Add fried ravva, cook for 5 mins. 
  • Now add sugar, fried nuts and raisins. After adding sugar, ravva gets watery due to melting of sugar.
  • Allow it cook until the mix gets cooked. You can notice the ravva is non sticky..confirming that it's done.
  • Immediately empty the kesari onto a plate coated with ghee. 
  • Take an Aluminium foil, spread on top of kesari, press the foil on kesari well so that it gets distributed on the plate without any lumps.
  • Remove the foil cover, let it sit for 15 mins. Now you can cut it into pieces as shown in the picture above.



Poornam Booralu


Ingredients
Chana dal - 4 cups
Sugar - 4 cups
Oil - To fry
Maida/All purpose flour - 1 cup (max)

Method

  • Wash chana dal, pressure cook them until 1 whistle.
  • Strain the water and let the chana dal sit for a while.
  • Now mix sugar and cooked chana dal, grind to a coarse paste.
  • After grinding if the paste gets watery..take the ground paste in a nonstick vessel and cook the mix until it gets thick enough to roll into balls.


  • Mix the maida flour to the consistency level of bahjji.
  • Dip the balls in the maida flour and fry them on medium flame.
  • Tempting Poornam booralu are ready...!

Carrot Halwa



Ingredients

Grated Carrot - 4 cups
Sugar - 3 cups (as per taste)
Butter - 3 tbsp
Cashews, Almonds - few

Preparation time: 60 mins

Method

  • In a nonstick pan, add 2 tbsp of butter, heat it.
  • Add grated carrot, allow it to boil until the quantity becomes half (approximately 25-30 mins).
  • In another vessel, in a tbsp of butter, fry almonds and cashews, keep aside.
  • Now add sugar to the boiling carrot, fried almonds and cashews, mix the contents.
  • Boil the contents (10-15min) to make sure that the halwa is completely cooked.
  • Delicious Carrot Halwa is ready..garnish it with fried nuts!

Sweet Roti


List of ingredients

Wheat rava - 1 cup
Wheat flour - 3 cups
Sugar - 1 cup
Cardamom powder - 1 pinch
Water - 2 cups (to cook wheat rava)
Butter - 1 tbsp
Salt - 1 pinch

Preparation time - 45 mins

Method

  • In a mixing bowl, mix wheat flour, water, salt.  Mix the dough to the consistency level of chapathi/roti flour. Let it rest.
  • In a nonstick pan, take wheat rava, fry until the color changes. Now add 2 cups of water to it, cover the pan to allow boiling. 
  • Add sugar to the rava when it is almost boiled. At this point, the rava gets water due to sugar. Now add 1 tbsp of butter, cardamom powder. Cook rava on medium flame until it gets hard enough to roll into a ball. 
  • Make round balls with rava and keep them aside.
  • Now take some wheat flour, roll it into a disk. Place the sweet rava ball in the disk, and cover it with the edges of the disk (same as parantha). Roll it again to a thin disk.
  • Take a tawa, coat it with butter spray. Once it gets hot, place the sweet roti disk and cook it like a chapathi by flipping and spraying butter on both sides as needed.
  • Delicious sweet roti is ready...

Variations

  • Semolina can be used for stuffing inside instead of wheat rava.
  • Wheat flour can be replaced by all purpose/maida flour.
  • Instead of cooking it as a roti, the disk can also be fried as a poori.


Almond Burfi



Things needed

Almonds - 1 cup, blanched for 3 mins
Milk - 1 cup, whole milk preferably
Butter - 2 tbsp
Sugar - 1 cup (brown)
Elaichi/Cardamom powder - 1 pinch

Preparation time
45 mins

Method

  • Grind almonds and milk to a paste.
  • In a vessel, add butter, let it melt. Now add the ground paste, sugar; 
  • Boil the contents on a medium flame until it gets thickened as shown below


  • Add cardamom powder, mix well. Now spread the almond paste on to pre greased (with butter)  plate and let it cool.
  • Once the burfi paste gets cooled, cut it into pieces.
Note:
  • Keep stirring the contents to make sure that the mixture does not burn.

Egg less Banana Cake


Ingredients


All purpose flour-1.5 cup
Sugar- 1cup
Salt-1/2 teaspoon
Baking soda-little
Baking powder- 1/4 teaspoon
Flax seed powder-2 table spoons
Oil- 3/4 cup(1/2 cup oil+1/4 cup butter-optional only!)
Ripe Bananas-1 1/2(1& 1/2)-mashed
Pineapple- 200 gm- small pieces
Cashews-50 gm- pieces
Almonds-100gm-pieces
Raisins -50 gm-cut into halves
Water- to dissolve/mix  flax seed powder


Preparation time: 30-35 mins


Method
Make a solution with flaxseed powder and water.
Mash the banana, cut raisins, almonds and cashews into pieces of desired size.
Take all purpose flour/maida flour in a big bowl, add flaxseed solution, and all the ingredients listed above.
Mix the contents well and don't batter the mix as in the case of regular cake making.
Take an aluminium pan and coat its internal surface with butter(unsalted).
Pour the mix into an aluminium pan.
Bake the cake mix @375F for 20-25 mins.After 20mins, check with toothpick by inserting it into the baking cake mix to ensure the cake is baked.


Delicious banana cake is ready..


Note:
If pineapple is not available, it can be replaced with 1/2 banana.
Instead of flaxseed powder solution, 2 eggs can be added.

Atukulu-Flattened rice laddu




Items needed

1 cup atukulu
3/4 cup sugar-powdered or brown sugar as it is
1/4 cup almonds
1/4 cup dry coconut powder
Butter(unsalted) or Ghee as needed
Elaichi powder-for flavor
Raisins-few
Preparation time:1 hour

Method:

Fry flattened rice/atukulu in a tea spoon of ghee until their color turns to reddish.Allow to cool down.
Cut raisins into their halves (vertically or horizontally) and fry them in 1/2 teaspoon of ghee/butter.
Fry separately almonds(skin peeled ones) and coconut powder,allow it to cool.
After cooling, grind atukulu+almonds+coconut  in a blender as powder.
Now add powdered sugar to the ground powder, and mix well.
Melt butter(unsalted) or ghee, and use it to wet the powder and make round balls as shown in the figure.
Allow some time for drying.
Tasty Laddus are ready!
