Carrot fried rice


Items needed

Carrots-1 cup (grated)
Onions-1/4 medium sized, sliced-optional
Green chillies- as needed
Almond halves-few
Cooked rice-2 cups
Oregano leaves -few
Mint leaves-few or mint powder-1/2 tsp
Lime juice-2 tsp
Salt-as needed
Oil-1tbsp
Peas-1/2 cup (Soaked, boiled)

*Preparation time- 15mins (excluding time for rice to cook)

Method

  • In a pan, add oil, allow it to get hot; fry onions, green chillies, later add peas and almond halves. Continue frying on medium flame.
  • Add grated carrot, mint powder, oregano leaves saute altogether.
  • Once the mixture gets done, add lime juice and cook the contents for 2-4mins.
  • Add fluffed rice and salt; Mix the contents well, cook on medium flame for 3 mins.
          Appetizing carrot fried rice is ready...!
