Cabbage-Peas stir fy


Items needed

Cabbage - 1/2 kg
Peas - 100gm
Onions - 1 small one, cut into pieces
Curry leaves -  few
Oil - 1.5 tbsp
Flax seed powder - 1 tea spoon
Curry powder -1 tbsp
Coriander powder - 1 tbsp
Oregano leaves - few
Chilli powder - as needed
Salt - as needed
Turmeric powder - as needed

Preparation Time - 25 mins
Cooking Time - 25 mins

Method

  • Cut cabbage, microwave for 8mins with minimum water strain, keep aside.
  • In a nonstick pan, add oil, fry onions, add oregano leaves, grated garlic and flax seed powder.
  • Add peas (frozen), fry them for 3 mins. Add turmeric powder, later add partially cooked cabbage.
  • Fry the contents for 5-8 mins. Add salt, keep frying for 5 mins.
  • Add chilli powder, coriander powder and curry powder, fry for 5 mins on low flame.
  • Cabbage- peas fry is ready!!





Rajma/Red Kidney Beans recipe


Items Needed

Rajma - 1 Tin
Tomato - 1 medium sized
Garam Masala - 1/2 table spoon
Onions - as needed
Oil - 1 tbsp
Salt - as needed
Coriander powder - 1/2 tea spoon
Garlic - 1 pod, grated
Chilli powder - as needed
Paparika - very little for color
Cinnamon powder -1/2 tbsp

Preparation Time - 10 mins
Cooking time - 20 mins

Method

Microwave rajma in microwave safe bowl for 3 mins on high power, strain and keep aside.
In a cooking vessel, add oil, onions and cinnamon powder.
After frying the contents add tomatoes, boil them until they become soft.
Add rajma with 1/4 th of it being mashed.
Allow it to boil for 5-8 mins.
Add water as per the gravy consistency, to it add salt, chilli powder, paparika powder, coriander powder, garam masala. Allow it to boil for 5-8 mins or until desired consistency. Add coriander leaves for garnishing.


Pudina/Mint Rice


Things needed:

Rice - 1/2 cup.
Pudina/Mint leaves-1/2 cup
Mint/ Pudina  powder - 1 table spoon
Cumin powder - 1 tea spoon
Sugar - 1 tea spoon
Lemon juice - 1 table spoon
White pepper - 1 tea spoon (as per taste)
Salt - as per taste
Green chillies - 1, sliced
Onions - 1/4 th of medium sized, cut to small pieces
Oil-1.5 table spoon
Methi powder/Fenu greek powder - 2 pinches
Cinnamon powder -1/2 tea spoon
Garam masala - 1/2 tea spoon (optional)

Preparation time - 10 minutes
Cooking time - 15 minutes (excluding rice cooking)


Method:

  • Cook rice, fluff it, keep aside.
  • In a nonstick pan, add oil,after it gets hot add onions, chillies.
  • Add cinnamon powder, methi powder and sugar fry all the contents for 5mins.
  • Add mint leaves and later mint powder, fry them moderately.
  • Add lemon juice and later add rice.
  • Now add white pepper, garam masala and salt as needed.
  • Mix the contents well and fry on low-medium flame for 5 mins.
  • Delicious pudina fried rice is ready!..


Note:

  • Add cashews/ almonds if needed.
  • 1 tbsp of fresh  grated coconut can be added to reduce the strong flavor of mint leaves.
  • Can replace mint powder with leaves as a whole, vice-versa.
